Inside are three prime steak cuts, all dry-aged for over 28 days in our Himalayan salt chamber. The result is steaks that are succulent, tender, buttery in texture, and full of deep, complex flavour. These qualities are rarely all found in a single cut, this meat is unrivalled in quality on the carcass.

"Think classic steaks, and the mind jumps to classic garnishes; chips and a well-made sauce, itâs hard to go wrong down this route. However, there are other options if youâve had your fill of steak and chips. A salad of rocket and watercress, dressed with a hazelnut dressing and then finished with a blizzard of finely grated parmesan is a mouthwatering combination; the parmesan provides that umami-rich seasoning. A dish of perfectly ripe tomatoes, seasoned with care and then dressed in a tonnato sauce would work wonderfully well. A particular favourite of mine is to fry leaves of radicchio in crushed garlic, fresh rosemary, nettles, and plenty of olive oil, then dress with good vinegar and capers. The natural bitterness of the leaves is a pleasing contrast to the deep flavour of the beef."
